Glazed Goblin Beignets

Delicious beignets filled with a hazelnut-pecan filling and dipped in a white chocolate ganache.

Ingredients

BEIGNETS
250G FLOUR
220ML MILK (lukewarm)
1/2 EGG
20G YEAST
20G SUGAR
20G BUTTER, room temperature
Pinch of SALT

FILLING
100ML CREAM
200ML NUTTY SPREAD

Method

  1. Place all ingredients for the beignets in a big bowl and combine vigorously for 15 minutes. This is either an easy task with a stand mixer or a great workout for your biceps!
  2. Let the dough rise for 45 minutes, then stir once with a wooden spoon to let the air out and let it rise for another 10 minutes.
  3. Fill a large saucepan with vegetable oil and heat it to 160°C. Form little balls with the dough and carefully lower them in the oil. Cook for 3 minutes on each side.
  4. While the beignets cool down, prepare the filling. Whip the cream and mix it with the nutty spread. Set aside in the fridge until the beignets are at room temperature.
  5. Punch a hole in the beignet (I use chopsticks) and fill them with the delicious filling.
  6. You can add icing sugar on the beignets or you can dip them in a white chocolate ganache.

These beignets were inspired by a vicious gang of cave goblins. We were on our way back from a tiring adventure and had to spent one final night in the woods. Our friend Bart, the bard, volunteered to be the first one on watch. Hours later, we woke up and Bart was nowhere to be seen… There were clear signs of a struggle and the liar of the kidnappers was easily located as they did not even try to cover up their tracks.

The tracks led us to a cave deep into the forest. We snuck inside and searched our friend chamber by chamber. Bart was nowhere to be found. The last chamber we checked was the goblin queen’s private quarters. There was a trail of crunchy leaves and dirty feathers leading to the tiny bed in the middle of the room. Tied to the bed was an awkward but gorgeous looking half-elf staring at us with big eyes. “You found me! Please untie me before she comes back!” whispered Bart. And that’s when we heard leaves crunching behind us…

Behind us stood a small but hefty goblin dressed in a dirty white dress. She had a tiara made of small animal bones, dead leaves and twigs. A dozen angry goblins were standing behind here. Don’t ask me how, but we made it out of there! Apparently, the goblin queen Kheass spotted Bart in the forest and was ready to instruct the other goblins to attack our party when something stopped her in her tracks. The reflection of the moonlight in the bright blue eyes of the half-elf, his pale skin and broad shoulders made her black heart skip a beat. Bart would be her fifth husband.
