PEANUT MERINGUE COOKIES
150G PEANUTS
125G SUGAR
100ML EGG WHITES
Pinch of SALT
100G CHOCOLATE
BLUEBERRY BUTTERCREAM
150G BUTTER
100G BLEUBERRIES
300G POWDERED SUGAR
Method
- Roast the peanuts in the oven (190°C). Keep a close eye on them as they burn quite rapidly.
- Put halve of the peanuts in a blender and blend until you get a very fine – almost floury- texture. Be careful to not overdo it or you’ll have peanut butter. Mix the remaining peanuts in small chunks – this will add a fun crunch to your cookie.
- Combine the ‘peanut flour’ with 75g of sugar and a pinch of salt.
- Whisk the egg whites until they form soft peaks. While you continue whisking, add the rest of the sugar.
- Combine the meringue with your peanut flour mix and pipe the mixture into little hoof shapes.
- Bake for 10 minutes at 190°C or until lightly golden. Let it cool down on the baking paper for a couple of minutes before you transfer them on your cooling tray to avoid them from breaking.
- For the blueberry buttercream, heat the berries in a microwave or saucepan until they form a nice dark puree.
- Place the butter in a large mixing bowl and beat until you get a smooth and creamy texture. Add the blueberry puree while mixing and then add the powdered sugar.
- Pipe the buttercream on one side of a fully cooled cookie. Sprinkle some peanut bits over the buttercream and add another cookie on top.
- Dip one half of your cookie in melted chocolate.
